While trying to eat more healthful and wisely, I have been adding a salad at both lunch and dinner.
I use a mix of chopped romaine, broccoli slaw (for extra crunch!) and cucumbers. The broccoli slaw mix is my new favorite produce item. I can use it in stir fry, on salad, and on sandwiches. It's cold and crunchy, and has broccoli stalks and carrots. High in fiber and so so good for you and me!
I love serving it with Ranch using Greek Yogurt. Instead of using sour cream and mayo to make the usual ranch, I use plain Greek Yogurt - full of protein. Mix it with a packet of the dry Ranch mix, and thin it with skim milk. Pretty swanky!
