Puerto Rican Beef + Mashed Sweet Potatoes

Have you heard about the new way of eating called Clean Eating?? Or Paleo??



It seems simple enough. 
Cut out all processed foods: gluten, dairy, and sugar. 



You are left with vegetables, fruits, meats, and nuts. While some may groan and moan about how "little" you are eating - in actuality, L-O-T-S of meals can be made from these ingredients!

Here is an example of an easy, filling dinner you can make in under half an hour!






Puerto Rican Beef + Mashed Sweet Potatoes
 BEEF:
1 lb ground beef {preferably hormone free/organic}
1 small onion, diced
1 medium red bell pepper, diced
3 cloves garlic, minced
2 tbs Curry Powder
1 tsp Cumin
Salt & Pepper, to taste
One bunch of fresh Spinach 
1/2 cup water

Brown the beef, and drain any grease. Add onions & peppers and cook till soft and tender. Add garlic at the end, as well as the spices. Add half cup of water & spinach. Simmer for 10 minutes, then serve over mashed sweet potatoes! Yumm!

*To make it {real} Puerto Rican Beef, you should add green olive with pimentos. I detest olives, therefore excluding them from the party!

POTATOES:
sweet potatoes, peeled and diced. Then boiled or roasted until soft and mash-able. Mash till smooth, adding a pinch of salt and pepper to taste.
